First of all, a quick apology for the past four months of radio silence! 2016 started off with a bang and has continued at a frenzied rate, so blogging went to the back burner. So for the next few weeks, I’ll be sharing recipes that are fast, easy, tasty, and of course healthy, that have kept me going when time is of the essence.
Now, a word about egg salad. I’ve never liked it. Mayo freaks me out. It wasn’t until recent years that I was adventurous enough to eat it, and even then, I gulped it down so as not to taste too much of it. It never occurred to me that I could NOT use mayo and instead use a substitute. Like Greek yogurt. And just like that, I became an avid lover. I eat it on whatever I have on hand, bread is of course the obvious choice, but today happened to be rice cakes, which are equally delicious, if not slightly messier. And let me tell you, it is a life saver when you come home after spending two hours in LA traffic and need something in your belly asap. I like to make it once a week to have on hand; it always gets eaten.
Here’s what you’ll need:
8 Hardboiled Eggs Prep time: 20 minutes
½ – ¾ cup Plain Greek Yogurt Servings: 4
1 tablespoon Red Onion- minced
1 Clove of Garlic – minced
1 teaspoon Mustard
¼ cup Bread and Butter Pickles- chopped
½ teaspoon Salt
½ teaspoon Pepper
½ teaspoon Garlic Powder
Dash of Cayenne Pepper
Begin by filling a medium saucepan with water. Bring to a rolling boil. Carefully drop in eight eggs. I like to use a spoon to set them in to avoid cracking the shells. Boil for 5 minutes, then turn off the heat and let rest in the water for another 10 minutes. While the eggs are resting, chop your onion, garlic, and pickles. Once the time is up on the eggs, run the entire pot under cold water, this will make peeling a dream. Peel the cool eggs under running water, roughly chop and place in a medium size mixing bowl. Add the rest of the ingredients and mix with a fork, mashing eggs to desired consistency. Start with ½ cup of the yogurt and add more for a creamier texture. Now you have lunch, snack, or dinner ready to go!
