Ok. This entry is another we can file under the I-Don’t-Have-Time-To-Cook-But-I-Need-A-Snack tab. These peanut butter cherry bites are one-inch balls of energy, and not only are they super easy to make, but they also take ten minutes to prepare. So, no time? No problem!
The other really cool thing about these peanut butter cherry bites, is that you can get creative, any nut butter, any dried fruit, chocolate chips, pretzels, basically whatever you have in the pantry. I would say they keep for about a week in the fridge, but mine have never made it more than two days before they’re demolished.
I also like having these on hand for when I’m craving dessert. The chewy cherry and subtle sweetness from the honey hit the spot every time.
Peanut Butter Cherry Bites
Prep time: 10 min, Ready in 1 hr. 10 min
1 scant cup rolled oats
½ heaping cup peanut butter
½ cup dried cherries, unsweetened if you can find them
¼ cup honey
½ teaspoon chia seeds
½ teaspoon ground flaxseed
½ teaspoon cinnamon
½ teaspoon vanilla
Pour everything into a medium mixing bowl and stir until all of the oats are incorporated with the peanut butter. It’s more like mashing, less like stirring. Next, scoop out tablespoon-sized portions and squeeze very well until it feels like a solid mass. Shape into a nice ball and place on a plate, cutting board, or cookie tray, we just want them to be flat and not touch each other. Put the tray in the fridge and let settle for an hour.
