One Bite Vegan Cookies

  • 1 cup almond flour
  • ½ cup coconut sugar
  • 2 tbsp coconut flour
  • 1 tbsp xanthan gum
  • ½ tsp baking soda
  • ½ tsp vanilla
  • ½ tsp salt
  • 3 tbsp coconut oil
  • 3 tbsp coconut milk
  • ½ cup chocolate chips


  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silpat and set aside.
  • Mix together all the dry ingredients in a medium bowl, minus the chocolate chips.
  • Melt the coconut oil and pour over the dry ingredients. Add one tablespoon of milk at a time, stirring in between each addition. If you’re making larger cookies, stir in the chocolate chips. Or if you’re going for one bite cookies, press one chip into each cookie after rolling.
  • Scoop out roughly a teaspoon of cookie dough. Use your fingers to press it into a ball. Place on the cookie sheet and press down to create a thick disc. Continue with remaining dough.
  • Bake cookies for 10-12 minutes, until golden brown and fragrant.
  • MOST IMPORTANT STEP: Allow cookies to cool completely before enjoying. This final step is when the cookies are solidifying.
  • Store cookies in an airtight container in the fridge or freezer.
