- 1 cup dry quinoa
- 2 cups water
- ½ tsp salt
- ½ tsp cinnamon
- 1 cup coconut milk
Toppings
- banana
- kiwi
- almond butter
- hemp seeds
- maple syrup
Bring the water and quinoa to boil. Once the water boils, reduce the heat to a simmer, cover the pot, and cook for 15 minutes.
After fifteen minutes, uncover the pot, fluff the quinoa with a spoon, then add in the salt, cinnamon and coconut milk. Stir well.
Top with fresh fruit, nut butter, seeds and the sweetener of your choice, I love maple syrup. Serve while the quinoa is still warm. Enjoy!
