Breakfast Quinoa Power Bowls

Ingredients

  • 1 cup dry quinoa
  • 2 cups water
  • ½ tsp salt
  • ½ tsp cinnamon
  • 1 cup coconut milk

Toppings

  • banana
  • kiwi
  • almond butter
  • hemp seeds
  • maple syrup

Instructions

  • Bring the water and quinoa to boil. Once the water boils, reduce the heat to a simmer, cover the pot, and cook for 15 minutes.
  • After fifteen minutes, uncover the pot, fluff the quinoa with a spoon, then add in the salt, cinnamon and coconut milk. Stir well.
  • Top with fresh fruit, nut butter, seeds and the sweetener of your choice, I love maple syrup. Serve while the quinoa is still warm. Enjoy!
