This recipe for breakfast quinoa power bowls is actually one of my old creations that I decided to revamp, making it easier, quicker, and just as tasty! While I will forever love oatmeal, it’s good to take a break every once in a while, and quinoa is a ready substitute when you’re craving a warm, filling, porridge to start the day.
To make my breakfast quinoa power bowls, you make quinoa as you normally would, boiling water, covering, simmering, etc. After the quinoa is done cooking, I added salt, cinnamon, and coconut milk while the quinoa was still piping hot. All that’s left to do is top the bowls with fresh fruit, nut butter, and seeds of your choice. So easy, so nutritious, and completely delicious.
Breakfast Quinoa Power Bowls
Ingredients
- 1 cup dry quinoa
- 2 cups water
- ½ tsp salt
- ½ tsp cinnamon
- 1 cup coconut milk
Toppings
- banana
- kiwi
- almond butter
- hemp seeds
- maple syrup
Instructions
- Bring the water and quinoa to boil. Once the water boils, reduce the heat to a simmer, cover the pot, and cook for 15 minutes.
- After fifteen minutes, uncover the pot, fluff the quinoa with a spoon, then add in the salt, cinnamon and coconut milk. Stir well.
- Top with fresh fruit, nut butter, seeds and the sweetener of your choice, I love maple syrup. Serve while the quinoa is still warm. Enjoy!
