Super Bowl Sunday, we all know it, and most of us partake in one way or another. I am about 50/50; 50% football, 50% food. Which brings me to this Greek yogurt French onion dip. Yup, a healthy, and delicious game day dip that will have everyone asking for a double batch. The best part? This Greek yogurt French onion dip can be made the night before, in fact I recommend doing so, the flavors only get better.

Last year we went to a friend’s house for the big game, and I have to say, the food snob in me was very disappointed. Our snacking options were, and I do not exaggerate: Doritos, Cheetos, Taco Bell, French fries, and a bag of mini carrots. I realize that most people could probably care less about the food, but for those of us who do, lets make a pact to create an awesome, healthy, and tasty feast!

As usual with my recipes, I didn’t bother measuring the ingredients for this Greek yogurt French onion dip because this recipe is so forgiving. So have fun! Serve with crackers, (I made these from scratch and once I’ve perfected the recipe, I’ll be sharing it with you!), fresh veggies, chips, or pita crisps.

Greek Yogurt French Onion Dip

Greek Yogurt French Onion Dip
Yields about 1 1/2 cups

1 cup plain Greek yogurt (I used full fat Fage)
1 onion- diced
4 cloves garlic- minced
1/2 t. thyme
2 t. lemon juice
2 green onions
2 T. olive oil
Salt and pepper to taste

1. Begin by heating a medium skillet over low heat. Add in the oil, onion and thyme.

2. Caramelize the onion slowly, stirring every few minutes. The whole process will take about 30 minutes. Go low and slow as they say.

3. After 15 minutes, add in the minced garlic. Once the mixture has reached a deep golden brown, remove from heat.

4. Dice the green onion and add everything into the yogurt. Season with salt and pepper. Stir well. Refrigerate in an airtight container and let sit overnight (preferably) or until chilled. Serve with your favorite dippers, and goooooo team!
