Chia Power Puddings

Lazing around on a Sunday morning while pancakes bubble and bacon sizzles, is amazing. But for me, most mornings call for quick, grab-and-go breakfasts that will get me going and keep me energized. These chia power puddings are full of protein, fiber, and natural sugars, and are made the night before, which means all you have to do in the morning is grab a spoon and dig in!

The recipe for these chia powder puddins is very forgiving, if you want to leave out the protein powder, accidentally add too much oatmeal, or just don’t feel like measuring, it will still work out and taste delicious the next day! You can add whatever fruit you have on hand, I like banana and blueberries, strawberry and kiwi, or combining a little of everything.  This recipe makes three to four servings, depending on your appetite in the morning. If you are using vanilla protein powder with added sweetener, leave out the agave nectar.

Chia Power Pudding:

1 c. Coconut Milk
1 c. Plain Greek Yogurt
¾ c. Old Fashioned Rolled Oats
2 T. Chia Seeds
2 T. Flax Meal
1 scoop Unflavored Protein Powder (I use whey protein isolate from www.truenutrition.com)
1 t. Vanilla
1 t. Cinnamon
1 T. Agave Nectar

Fruit for topping:

1 Nectarine
1 Kiwi
5 Strawberries

Whisk together all the ingredients for the pudding in a medium mixing bowl. Pour into three or four separate containers and refrigerate overnight. Chop fruit and place in another container. Once the puddings have thickened and set in the morning, you can add the fruit to the top. And that’s it. Have a happy morning everyone!
