I am in full denial about summer coming to an end, and so am doing everything in my power to preserve these last few weeks. One way to keep your inner vacation alive: this rainbow mango salsa. It is a party in your mouth, and will instantly transport you to your favorite tropical beach.

I have been on the fence about fruit in salsas for a while, but recently had a truly delicious experience, which led me to this wonderful rainbow mango salsa. Spicy foods are tricky for me; I love them, but instantly start sweating, my nose runs, and I have to strip down to bare essential clothing. So for this colorful condiment, I chose to create an explosion of flavors and textures in lieu of excessive heat. If you’re one of those people who likes their salsa hot, then go to town on the jalapeños!

As always, my recipe for rainbow mango salsa is a guide; use what you have. This batch made quite a lot, which got zero complaints from the boyfriend, who preceded to put it on EVERYTHING for the next few days. If you don’t have mango, peaches would be an amazing substitute.

Rainbow Mango Salsa
Yields about 3 cups

1 mango, peeled and diced
3 medium tomatoes, diced
1/4 cup diced red onion
1 clove minced garlic
4 green onions
2 limes
1 t. minced jalapeño
1/4 c. chopped cilantro
Salt to taste

This recipe is hard, are you ready? Dice everything into small pieces. Scoop into a medium sized bowl. Pour in the lime juice and season with salt to taste. And that’s it!

The key to a nice depth of flavor, is covering and allowing the salsa to marinate. I left mine for an hour, but it really only gets better with time. Adjust any of the ingredients to suit your tastes. The juices from the mango, tomatoes, and limes, give it the perfect amount of liquid. Give it a gentle stir before serving. Enjoy!
