As the heat wave swept through the country last week, and temperatures here in Los Angeles hit 116 degrees, I turned to this chili lime watermelon for relief. Unlike a snow storm, life is expected to go on as normal during extreme heat, so hydration is key. When I get really hot, my appetite goes, and this chili lime watermelon was the only thing I craved.
My boyfriend and I went through 2-3 watermelons in seven days, and it’s not rocket science to see why. Pop it in the refrigerator overnight, and in the morning, it is perfectly chilled. Slice up the whole thing, squeeze on lime juice, to cut the sweetness and add flavor, then for that extra little something, try a sprinkle of chili powder and salt. I am a big fan of this chili lime seasoning blend from Trader Joes, a little goes a long way. Now you’re not just eating watermelon, you’re eating chili lime watermelon, which sounds like a pretty decent snack! Add in minced jalapeños for some extra heat, and bam! Chili Lime Watermelon
1 small seedless watermelon
1 lime- juiced
1/2 t. chili powder or Trader Joes Chili Lime Seasoning Blend
1 t. minced jalapeño (optional)
1. Refrigerate the watermelon overnight.
2. Slice the watermelon into cubes, then top with lime juice, a sprinkle of chili powder, a pinch of salt, and jalapeño, if using. Try not to eat the entire batch at once!
