The inspiration for these banana peach protein pancakes came from a friend and fellow blogger, www.dancingfordonuts.com. Her recipe is for chocolate protein pancakes and is delicious! I tweaked it to fit my tastes and ingredients, and am very happy with the result. These banana peach protein pancakes have three main ingredients: eggs, bananas, and protein powder. From there I added in freshly sliced peaches because they are so good right now, but you can leave them out all together, or add in your favorite fruit! Because there isn’t any flour in this recipe, they are a nice, lighter alternative to traditional pancakes, yet they are still fluffy and perfectly satisfying.

My favorite way to enjoy these banana peach protein pancakes, is with plain, whole milk Greek yogurt spread on top, with whatever fresh fruit I have on hand. The protein powder that I use is vanilla flavored, and sweet enough that I don’t ever add any extra sweetener on top. But if yours is unflavored, drizzle over a little honey or maple syrup! I also love them with homemade nut butter, jam, and grass-fed butter. They are surprisingly filling; one batch makes about 10 silver dollar sized pancakes. My boyfriend and I can barely polish all of them off between us!

Banana Peach Protein Pancakes
Yields 10 silver dollar-sized pancakes

2 bananas- mashed
4 eggs
1 scoop protein powder (I used plant based vanilla flavored)
1 peach- diced
1 t. chia seeds
1 t. flax meal
1 t. hemp seeds
1 t. coconut oil- melted
1/2 t. cinnamon
1/4 t. baking powder
1/4 t. salt

1. Begin by mashing the bananas with a fork until smooth in a medium sized mixing bowl. Crack in the eggs and whisk with the bananas until well combined. Add in the rest of the dry ingredients and mix well. Pour in the melted coconut oil, and half of the chopped fruit (if using) and stir. Reserve the remaining peach for topping later.

2. Pour small ladlefuls of batter onto greased griddles, using medium heat. The batter will be thin, but will thicken dramatically once cooked. The pancakes cook fairly quickly, so keep a sharp eye on them. Be sure and grease the pan in between each batch. I have used cooking spray, butter, and coconut oil with equally tasty results.

3. Top the pancakes with yogurt, the rest of the peach, nut butter, honey, jam, or fruit of your choosing! Bon appetite.
