Whether you’re all about the snacks, the commercials, the game, or all three, Super Bowl Sunday is just a couple days away and it’s time to get those menus planned out! So I decided to round up a handful of my favorite healthier Super Bowl snacks for you to add to your spread.
My table this year is going to be fairly simple; I have hit a massively busy time of year with auditions, which means my cooking gets paired down to easy, time-efficient dishes. My goal is to balance out all the chips and cheese on our charcuterie board with loads of crunchy, raw veggies, sliced apples, and my favorite homemade hummus. Here’s the recipe I’m using (it was last week’s post): Edamame Sweet Pea Pesto Hummus
We’re also going to be having burgers; my boyfriend loves my veggie burgers almost as much as the real deal! This recipe for Quinoa Polenta Veggie Burgers makes the perfect size sliders for a party platter. Plus you can make the mixture the day before, then bake the burgers at lunch time.
Making healthier Super Bowl Snacks doesn’t mean skimping on the flavor! We had these Spicy Buffalo Cauliflower Tacos a few years ago on game day, and they NEVER disappoint. Spicy, tangy, and creamy, these tacos are my favorite finger food. Tip: buy extra avocados and make guacamole too!
This Sweet Potato Nacho Pie was SO good last year. Nachos are always fun because everyone can customize them exactly to their liking. This recipe a glorious marriage of fajitas and nachos—simply irresistible, and also packed with veggies.
And for something sweet, my Peanut Butter Cookie Dough Truffles win every time! The best part about this dessert? Make them as early as tonight; no stress or extra clean up on Sunday, just decadent, peanut buttery-love.
