
The new year is upon us, and with it, new resolutions to eat healthy. For me, this drive to eat clean comes from a couple solid weeks of enjoying rich, holiday favorites. This loaded avocado toast meal prep satisfies a few key breakfast criteria: tasty, easy, quick. And while I love whipped cream on my pancakes and coffee, (who doesn’t?) I’m looking forward to getting back on track.

This morning I got everything ready for this loaded avocado toast meal prep, and twenty minutes later, I had four breakfasts ready to go! With healthy fats, protein, carbs, and tons of flavor, this simple meal will get you going and keep you running. I like to have sprout sandwich bread on hand for this loaded avocado toast meal prep, which gives this dish a great crunch, while being sturdy enough to handle all the goodies.

As always, feel free to adjust this recipe to suit your tastes. I love tons of avocado; I use about a half an avocado per serving. And for the sake of meal prepping, hard boiled eggs are perfect, but poached or fried eggs are delicious for this recipe as well!

Loaded Avocado Toast Meal Prep
Yields 4 servings
Avocado mix:
2 avocados
2 T. Lemon juice
2 green onions- diced
1/4 c. Fresh cilantro- chopped
Salt and pepper to taste
Marinated tomatoes:
1/2 c. Halved cherry tomatoes
1 T. Olive oil
1 T. Balsamic vinegar
1 clove garlic- minced
Salt and pepper to taste
4 eggs- hard boiled or prepared to your tastes
4 slices of sprouted bread- toasted
1. Begin by making the eggs. For perfectly creamy hard boiled eggs, bring a small sauce pan of water to boil. Add in the eggs and boil for 5 minutes. Turn off the heat and let sit in the hot water for 10 minutes. Rinse with cold water.
2. While the eggs are cooking, mash the avocados in a small mixing bowl, then add in the rest of the ingredients.
3. Halve the cherry tomatoes, then mix together in a small bowl with the oil, vinegar, garlic, and salt and pepper.
4. Once the eggs are ready, peel off the shells and slice however many eggs you are using. Toast the bread, and load on the avocado, followed by sliced hard boiled eggs, marinated tomatoes, and a dash of salt and pepper.
Store leftovers in air tight containers and enjoy some stress-free breakfasts!
