I made these gf lemon poppyseed donuts a few weeks ago for brunch, and he couldn’t get enough of them. So I thought I’d share this tasty recipe with you all, so you can celebrate with us, wherever you are!

gf lemon poppyseed donutsFor these gf lemon poppyseed donuts, I used coconut oil, coconut sugar, and tangy plain Greek yogurt to keep them moist. I should also mention, the donuts are baked, which makes me feel zero guilt about eating a handful (try 5) for breakfast.

The glaze is very simple for these gf lemon poppyseed donuts, you’ll just need lemon zest and juice, and powdered sugar. You could always just do a dusting of powdered sugar too. However, I had such a fun time decorating my last donut post, that I might get funky with it. To color my glazes, I use frozen blueberries and raspberries. Those baked sweet potato donuts looked a little something like this:

Gf Lemon Poppyseed Donuts
Yields 10-12 donuts

2 T. coconut oil- melted
1/4 c. coconut sugar
2 eggs
1/2 c. plain Greek yogurt
1/2 lemon- zested and juiced
1/4 t. baking soda
1 t. baking powder
1/2 t. vanilla
3 T. poppyseeds
Pinch of salt
1 c. gluten free 1-to-1 baking flour (I use Bob’s Red Mill)

Glaze:

1/2 lemon- zested and juiced
1/2 c. powdered sugar
Splash of milk if icing needs thinning

1. Preheat the oven to 375 degrees. In a large mixing bowl, whisk together the ingredients in the order they are listed. Once you add the flour, stir only until incorporated. If the batter is over mixed at this point, it will become rubbery.

2. I typically scoop the batter into a small ziplock bag and cut the end off, and use it to pipe the batter into greased donuts pans. You can also use a spoon and scoop the batter into the pans. Either way gets the job done.

3. Bake for 15 minutes.

4. Whisk together the glaze in a small bowl. Once the donuts have rested in their pans for 5 minutes, transfer them to a wire cooling rack. Dip the donuts in the glaze and return to the cooling rack to drip. For easy clean up: place a sheet of plastic wrap, paper towels or even a baking tray underneath the wire cooling rack to catch the drips. Bon appetite and happy birthday Brent!
