I have never been into reality TV. It’s just not my cup of tea. However…my old roommate and I got helplessly addicted to The Bachelor, and soon another girlfriend starting coming over every Monday night to catch up on all the latest gossip, kisses, and of course, chocolate. Because there is really nothing better than watching shitty TV and eating chocolate with your girlfriends. No offense, Chris Harrison.
Being the health nut that I am, I was thrilled when my sister-in-law’s mother introduced me to these vegan paleo chocolates. They are ridiculously easy—only THREE ingredients—and they taste fudgey and rich. Suddenly Monday nights were healthier, tastier, and guilt-free!
Vegan Paleo Chocolates
3⁄4 cup raw cacao
1⁄4 cup maple syrup
1/3 cup coconut oil
Pinch of salt
I like adding vanilla, cinnamon, and cayenne pepper too!
In a small sauce pan, heat the maple syrup and coconut oil. Mix together your dry ingredients in a medium bowl. Once the coconut oil is melted, pour the liquids into the dry ingredients and whisk together. It will thicken as the coconut oil cools. The consistency should be thick but still liquid, if it is too thick, add a tiny drizzle of coconut oil.
Spoon into silicone candy molds and freeze for at least thirty minutes. I found my mold on Amazon; Michael’s (the craft store) carries a bunch of different molds as well! This recipe makes 20-25 chocolates, depending on the size of your mold. Store in the fridge or freezer, in your favorite jar or covered container.
