My one regret with this recipe, is that I can’t claim is as my own! I found this vegan chocolate pudding on the food blog, www.feastingonfruit.com. It is so good. A few things you should know about these chocolate puddings before we get started:

I am seriously so impressed with this recipes; that it tastes like heaven but also WORKS, it just…bliss. You’re going to want to go to the store right now and buy the ingredients.
I always keep and reuse my little jam jars, mason jars, or small ramekins, which are perfect for this vegan chocolate pudding dessert! Jars are the best, because you pour in the mix, screw on the lid, refrigerate and when you’re ready to indulge, just pop off the lid and you have a cute little jar full of delectable chocolate pudding. Plus, they are great for transporting to a dinner party with friends, simply top off with fruit when it’s time for something sweet. I sprinkled chopped walnuts, dried cranberries and chunks of chocolate on mine for an extra crunch. As always, feel free to get creative and top them off with whatever suits your fancy, or enjoy plain!
Vegan Chocolate Pudding
1 c. Dates
1 ¾ c. Coconut milk
6 oz. Unsweetened Baking Chocolate (100% cacao)
Pinch of Salt
½ t. Vanilla
1. Begin by melting the chocolate, either on the stove or microwave, whatever works best for you.
2. While that cools slightly, blend together the dates and coconut milk on high in a blender. The goal is no chunks, so you can really go to town.
3. Next pour the chocolate, vanilla and salt in and give it a couple pulses.
4. Divide the mixture into four little glass jars, cups or ramekins, cover and let chill for at least four hours. And be prepared to become a believer!
